Roti Jala--means "net bread" literally--is another Malaysian delicacy that deserves special introduction on Rasa Malaysia. These lacy and net like pancakes/crepes are very popular during the Muslim fasting month of Ramadan, where vendors set up temporary stalls selling roti jala to go with various curries offered. Roti Jala is also very popular as an afternoon tea snack. For me, I can eat them anytime of the day as long as I have some curries to go with them.

I have always wanted to make Roti Jala, but there is a problem, I didn't have the mold. Recently I brought one back from home, together with the pie tee mold that I'd blogged about. I got to play with my new toy yesterday and dished out these fantabulous Roti Jala.

Suffice it to say, the mold was really easy to use; in no time, I finished up the batter and made 12 gorgeous looking lacy lads. (I can also totally use the mold to make this fabulous eggnet salad I had at Longrain, Sydney!) No Roti Jala is complete without curries, so I whipped up some A1 Best One Curry Chicken--the best curry chicken in the world!--that I'd previously raved about...(watch my cooking video after the jump)


Malaysian food is just so varied, compelling, and stimulating--not a single meal is ever boring, bland, or uninteresting.

Roti Jala and Malaysian Curry Chicken
Recipe: Roti Jala "Net Bread" or Malaysian Lacy Pancakes

Ingredients:

1 3/4 cup all purpose flour (1/2 lb)
1 1/2 cup low fat milk
1/2 cup water
1 egg
1/2 teaspoon salt
3/4 teaspoon turmeric powder
1/2 tablespoon oil
Ghee or butter (to grease the pan)

Method:

Sieve the flour and set aside. In a big bowl, mix all the ingredients well together (except the oil) and strain the batter. Add in 1/2 tablespoon of oil and set aside.

Heat up a pan with medium heat and grease it with some butter or ghee. Pour some batter into the mold and transfer the mold to the pan. As the batter flows through the holes of the mold, make circular rounds around the pan to form the netty patterns. (Click on this video clip for the cooking guide). After the top is set and done or when the bottom turns light brown, transfer the Roti Jala out and fold it into triangle shape. Arrange a few Roti Jala on a serving plate and add some curry chicken on the side. Serve immediately.

Recipe: Malaysian Curry Chicken

Ingredients:

1 boneless/skinless chicken breast meat (cut into small cubes)
3 tablespoons A1 Best One Meat Curry Paste
3/4 cup water
1 tablespoon coconut milk
1 shallot (diced)
1 tablespoon oil

Method:

Heat up a small pot and add in the oil. Saute the diced shallots until light brown. Add in the curry paste. When it smells aromatic, add in the chicken meat and do a few quick stirs. Add in the water and let it boil. Lower the heat and simmer the curry for about 10-15 minutes. Add in the coconut milk and serve hot.

OMG! Once I saw the word "roti" on my RSS feed I clicked on this first thing in the morning! I have an unhealthy addiction to any roti that I'm glad I haven't attempted to make any or I would balloon up to 3x my size. But now you've tempted me to make some! It looks so good! :)

Hi! I've been a silent reader for months, but I just wanted to say: Thank you for for your drool-inducing photos..although they do make my homesickness worse (I'm a Singaporean living in Chicago) sometimes....but somehow I take comfort in looking at them.

I use the same A1 instant Curry paste here in Melbourne!!! (Hope we are talking about the same thing). It's a "wet" curry paste, so the taste and flavor is FANTASTIC! Much better than the instant curry powder.

ehem..you seem to forget another way to enjoy roti jala..with sweet coconut gravy (santan gula melaka) or better with durian gravy...so roti jala can be enjoyed as both a savoury or dessert dish..

hey bee,

thanks for highlighting A1 curry paste! was looking for an authentic Malaysian curry after tasting one made by a M'sian gal in melb in 2002!! she used lengkuas, so not sure if A1 is the one i'm looking for.

and i was surprised A1 is made by a S'pore company right where i live! so suaku lah!

hv previously swore by Crab brand curry powder in a tin, now difficult to find.

it seems to me that the 'mold' could be easily reproduced by punching holes in the bottom of a plastic measuring cup. i believe i will give this a try.

Hi RM. I've been coming here off and on and I must say this is one of the better blogs for Msian food. Awesome pictures and great penmanship. Roti Jala is our family fav here in Salt Lake City. I noticed that you used the old-fashioned mold. Have you seen the triple tips mustard containers? Check that out :)

I've only learned to make Roti Jala s few weeks ago when a local Malaysian "kedai runcit" in Dublin supplied the trusty yellow plastic mould. It is ridiculously easy to produce them but they do require patience.

It is best to use a non-stick pan, as you wouldn't need to grease the pan everytime you make one. It might appear a bit dry as it cools down and softens -- you may spray them with the sunflower oil aerosol spray to "moisten" them when all is done and laid out.

Hi there. I brought back a copper 3-spout roti jala pourer from M'sia and tried it out last night with Amy Beh's roti jala recipe. The spouts are a little tiny and I'd to be careful to make the batter thin enough or it'd come out in drops rather than a stream. So yummy with made-from-scratch salmon curry!

Noticed you used low-fat milk instead of coconut milk - is that for health reasons?

Argus - I use coconut milk or milk, it all depends on what I have in handy. The difference is really subtle, I don't even notice it. ;)

Thanks for your reply, RasaM. Then you might like to add "or coconut milk" to your Roti Jala recipe (or it might give the impression that we're such a healthy nation when actually we love our coconut milk in so many things!).

I don't work for any publishing company at the moment. Used to work for Star. You might want to approach them about publishing - they have published at least three cookbooks. If not, ask Periplus or MPH.
